elBulli1846: the Story Goes On

In early February 2014, the Minister of Planning and Sustainable Development of Catalonia Santi Vila and the world-acclaimed chef de cuisine Ferran Adrià introduced the project of reconstruction of the famous restaurant elBulli1846, which is marked with 3-Michelin stars and five times(!) headed the ranking of the 50 best restaurants in the world. A project promoted by Ferran Adrià and Juli Soler aims to establish a unique centre in the world for innovation, research, and training in the field of avant-garde cuisine.

The project envisions an investment of 9 million euros through elBullifoundation and a completion period of 18 months. Furthermore, there will be an addition donation to the Catalan Government by Ferran Adrià and Juli Soler of the land and buildings of the new space. These facilities will be located on the former site of the elBulli restaurant, a world-renowned institution of reference that has highlighted Catalonia as an exemplar of international gastronomy. With an additional exhibition center open to visitors in Cala Montjoi, Roses.

PROJECT
The Creative Lab called elBulliDNA will be located in elBulli1846, a reference to all the dishes created by the restaurant, in Cala Montjoi. This will be a creative team of 30 people, mixing professionals of food and other various disciplines, who will explore various food experiences for eight months of each year focusing on the efficiency in creativity by using the cuisine as a creative language through the exhaustive classification of foods, called a “Map of Culinary Process: Decoding the Genome of Cuisine,” presented by Ferran Adrià in January in New York.

Furthermore, this team will be responsible for opening the elBulli restaurant 20 days of the year, where one month will have 50 % of the tickets given away for free to the general public through a raffle system, and 50 % will be used as fundraising to help ensure the continuation of the foundation. It will also be possible to visit elBulli1846 through making online reservations. However, elBulli1846 operational costs will also be covered by private patronage, as well as the activity of elBulli1846.

As an exhibition room, elBulli1846 will offer visitors a journey through history in order to understand the cutting-edge cuisine and, at the same time, a reconsideration of their own concept of cultural display with the help of the latest technologies that will play an important technological role with the partner Telefónica. It aims to be a space articulated as a pathway for the spread of creativity and innovation, using the cuisine as a language, through the evolution of elBulli and the work of elBulliDNA, contextualizing “what is cooking” and what was the origin of cuisine.

elBulli1846 in its broader scope, aims to become a leading center for the promotion and exploration of creativity mixed with an exhibition center to perpetuate the legacy of the history and spirit of elBulli in the future. elBulli1846 will contribute to the internationalization of Catalonia and the projection of the avantgarde cuisine. The new space will be composed by a central exhibition space of 4.385m², most of which are underground, and a campus with workshops and residence.
